Watermelon Bites

I recently visited a new restaurant and they were serving a watermelon salad. It was so bright and refreshing that it inspired me to create this cocktail bite. I paired watermelon with a sliver of jalapeno for color, crunch and heat

Watermelon Bites
20 1 1/2 Inch cubes of fresh watermelon (approximately a 1/4 of a small watermelon)
1 Teaspoon of rice vinegar
1 Teaspoon agave or honey
1/3 Cup of balsamic vinegar
1 Fresh Jalapeno
Kosher Salt

Pour 1/3 cup of balsamic vinegar in a sauce pan and simmer down until reduced by half. It should be thick and coat the back of a spoon. Cool completely and mix in agave. While the vinegar cools cut watermelon and place in a bowl, sprinkle with rice vinegar, mixing well. Seed the jalapeno and slice into very thin slivers. Depending on how hot you like it and how the hot the pepper is, you may want to use half a sliver. Place the pepper slice on each cube and use a spoon to drizzle the balsamic vinegar.
Sprinkle a few grains of salt. Serve immediately
