Brussel Sprout Chips


You will be surprised at how crunchy these lemony, savory chips get when baked.

Brussel Sprout Chips
1 Pound of fresh brussel sprouts
Juice and zest of one lemon
Olive oil
Parmesan Cheese
Kosher salt and pepper

Preheat oven to 450 degrees. Trim bottom of brussel sprouts, and remove any bad outer leaves. Peel leaves by snapping off at the base of the leaf. Place leaves in a bowl and sprinkle with olive oil,  salt, pepper, lemon juice and zest and mix well, coating all the leaves. Cover a baking sheet with foil and spray with cooking spray. Spread leaves in a single layer on baking sheet (over crowding with keep them from crisping) and bake for 15 minutes until starting to char, and leaves are crunchy. Sprinkle with Parmesan cheese, cool and serve immediately.

Cooks Note: These are delicious as a snack but are also a nice garnish for cream based soups or a risotto.
