Maple, Cayenne and Citrus Glazed Carrots
The heat of the Cayenne pepper and bright lemon are heaven with the sweetness of the carrots and syrup.
Maple, Cayenne and Citrus Glazed Carrots
8 Ounces baby peeled carrots
1 Tablespoon of butter
2 Tablespoons of good maple syrup
2 Tablespoons of fresh lemon juice
1 Teaspoon of cayenne pepper
Sea Salt
Blanch carrots by placing in a pot of boiling salted water for four minutes then remove them and stop the cooking in a bowl of iced water (instead of blanching, you can place carrots in a microwave safe dish with 1/3 a cup of water and cook for 4 minutes).
Once carrots are cool, drain and set aside. Melt butter in a skillet then add syrup. lemon juice and cayenne pepper. Mix well then add carrots, stirring occasionally until heated through. Sprinkle with a generous pinch of sea salt. Serve Immediately.
Makes 4 Servings
Cooks Note: You can blanch the carrots ahead and make just before ready to serve.
