Halloumi Cheese with Lime Caper Vinaigrette

My daughter and I LOVE this recipe. The fried cheese is delicious and has a bite that is one part melty, one part chewy, one part crispy. Previously I had to go to specialty shops to find Halloumi but I'm happy to report it's now a regular in the gourmet cheese section at my neighborhood grocery store. If you are not as fortunate, make the trip to a specialty store- it's worth it.

Halloumi Cheese with Lime Caper Vinaigrette

1 8 Ounce package of Halloumi cheese
1 5 Ounce package spicy sprouts
Flour for dusting
5 Tablespoons olive oil 
2 Heaping tablespoons of capers, drained
1 Tablespoon chopped cilantro
1 Large clove of garlic, crushed
1 Teaspoon stone ground mustard
Juice and zest of one lime
1 Tablespoon of Champagne vinegar
Salt and Pepper


Lay the cheese flat and cut across into 8 equal pieces. The cheese has some moisture to it, but that will help the flour stick.  Dust cheese in flour, coat, shake off extra and set aside until ready to fry. Combine 3 tablespoons olive oil, capers, mustard, vinegar, garlic, juice and zest and whisk until well incorporated. Stir in cilantro and season with salt and pepper. Place 1/3 cup of sprouts on each of 4 plates. Heat 1 Tablespoon olive oil in a skillet to a medium to high heat and fry 4 pieces (depending on size of pan) of cheese for 2 minutes until golden brown. Flip and fry another 1-2 minutes. Keep warm in oven while you fry the remaining cheese. Place 2 slices of cheese on the sprouts and spoon over with vinaigrette. Serve immediately.

Cooks Note: Instead of individual servings, create a platter arrangement and bring to the table to share .
