Grilled Pork Loin Chops with Pomegranate Barbecue Sauce

The pomegranate juice brings an element of sweet
and tart to make this recipe special.


4 1 Inch pork loin chops
2 Tablespoons fresh rosemary, chopped
4 Cloves of garlic, crushed
1/3 Cup olive oil
1 Cup plus 4 tablespoons of pomegranate juice
1/3 Cup of your favorite barbecue sauce
2 Teaspoons chili garlic sauce
1/4 Can of beer
2 1/2 Tablespoons of butter
Salt and Pepper

Serves 4                                                                                                                  

Mix together rosemary, garlic, olive oil, 4 tablespoons of pomegranate juice, 2 pinches of salt and 1 pinch of pepper. Place in a freezer bag and add pork chops. Marinate for 1 hour or up to 24 hours. While pork is marinating  make barbecue sauce.  Pour 1 cup pomegranate juice in a sauce pan. Simmer juice until it reduces by half then add barbecue sauce, chili garlic sauce and beer. Simmer for 10 minutes to marry all the flavors and cook off the alcohol in the beer. Add butter, stirring until melted. Salt and pepper to taste.

When ready to cook, preheat grill to hot, approximately 400 degrees. Place chops on the grill and coat with barbecue sauce. Grill for 7 minutes, do not move , basting with sauce half way through. Turn chops, baste with sauce. Grill for 7 minutes, basting half way through. Remove from grill and baste with extra sauce. Let setup for 3 minutes and serve with additional sauce on the side. For a pretty presentation, slice meat and drizzle with additional sauce. Serve immediately.

Cooks Note: Serve these with the Dijon and Parmesan Scalloped Potatoes . Delish!
