Tilapia with Capers,Tomotoes and Olives in Parchment

This is SO easy and delicious that you will want to make this a go-to meal for busy weeknight dinners.

Cod with Capers, Tomatoes and Olives in Parchment


1 Cup cherry tomatoes, sliced in half long ways
1/2 Cup Kalamata olives sliced in half long ways
2 Heaping teaspoons of capers
1 Pinch of crushed red pepper flakes
4 Tablespoons white wine
4 Tablespoons of butter
4 Sprigs fresh oregano
4 Cod fillets ( can use any mild white fish)
Parchment paper
Salt and pepper to taste

Serves 4
Preheat oven to 425 degrees. Tear 4 18 inch pieces of parchment paper, fold in half and cut into heart shapes. Crimp up one side of the "heart" to form a rim.  Mix together capers, pepper flakes, white wine, tomatoes and olives. Place fish on the side of the parchment paper with the rim. Spoon 1/4 of the tomato mixture onto the fish, top with a tablespoon of butter, 1sprig of oregano and season with salt and pepper. Fold  the side without the fish over the top and crimp parchment into a half heart pocket. Repeat until done. Place packets on cookie sheets, 2 per pan. Bake in a 425 degree oven for 12 minutes. Open up the bag and, slide the contents onto a serving plate and remove oregano. Serve with Citrus Couscous with Feta    and Peas ( recipe on this blog).
