Spicy Turkey Asian Lettuce Cups

These are a wonderful combination of savory, fresh, spicy and cool. This is perfect for a quick weeknight dinner and makes a beautiful presentation.

1 1/4 Pound ground turkey
1 Head of Boston Bibb lettuce
1 Tablespoon corn oil
1 Tablespoon chili garlic sauce
1/2 to 3/4 Bottle Bangkok PADANG peanut sauce
1 Cup shredded carrots
4 Green onions chopped
1 Lime
Sweet Chili Sauce for serving ( if desired)


Heat skillet and add one tablespoon of corn oil.
Add turkey, breaking up into crumbles until cooked through. While the turkey is browning, wash and separate lettuce leaves, chop the onions and shred carrots (I buy pre-shredded). When turkey is fully cooked . Mix in 1/2 to 3/4 bottle (this sauce has a lot of sauce, so add gradually to taste) of Bangkok PADANG peanut sauce. Gradually mix in chili garlic sauce, testing the heat as you go. Heat turkey getting a bit of caramelization on the bottom of the pan

Serve a few spoonfulls in the lettuce cups, top with carrots and onion. Serve with a squeeze of lime. Drizzle with sweet chili sauce if desired

 Makes 4 servings

Cooks note: These pair nicely with steamed Jasmine rice.
