Baked Halibut with Brown Butter and Blood Orange Sauce


This is works with  any flaky white fish like cod, sea-bass or halibut.

Baked Halibut with Brown Butter and Blood Orange Sauce

4 5 Ounce fish fillets
Cooking spray
Salt and pepper

Preheat oven to 425, line a cookie sheet with foil and spray with cooking spray. Place halibut on the sheet and season will with salt and pepper.  Cook for 12-15 minutes until the halibut flakes easily with a fork. While halibut is cooking, make the sauce.

Brown Butter and Blood Orange Sauce
2 Tablespoons butter
1 Teaspoon minced thyme
1/3 Cup fresh squeezed blood orange juice
Salt and pepper

Melt butter, add thyme and continue to cook until the butter is browned. Remove from heat and whisk in orange juice. Spoon on sauce over the fish and serve immediately. 

Cooks Note: For a sheet pan meal,  trim fresh green beans, drizzle with olive oil and season with salt and pepper, When the fish has 10 minutes left, add green beans to the pan. Easy and delicious.
