Creating Tapas truly represents the joy of cooking (and eating). This collection of recipes are some of my favorites to make and share with friends and family. 

Chicken croquettes with lemon and oregano

( use 1.5 cups of milk)

Dried Chorrizo with shallots, sherry and parsley

Remove casing from dried Chorrizo and plump by simmering in a pan with red wine for 30 minutes. Bias slice the chorizzo into coins and fry in olive olive oil, add shallots, then simmer in sherry, Finish with chopped Italian parsley

Warm Manchango cheese with garlic vinaigrette

Strip steak crostini and chimchuri

Spiced Marcona almonds

Toss marcona almonds in freshly chopped parsley and mix together

Kettle chips with smoked paprika

Sprinkle sea-salt kettle chips with smoked paprika

Seared Shishito peppers with sea salt

Add olive oil and peppers to a frying pan and heat pan to medium high heat, Stir constantly until peppers are blistered and blackened, Finish with sea-salt
