Mozzarella, Caper and Oregano Salad

Fresh mozzarella cheese is the perfect backdrop for spicy herbs and bright capers. This recipe goes really well along side grilled vegetables and crusty bread for a light vegetarian meal.

Mozzarella, Caper and Oregano Salad
1 8 Ounce fresh mozzarella ball at room temperature
1/4 Cup capers
1/4 Cup chopped fresh oregano
1 Pinch of red pepper flakes
1/4 Cup of good olive oil
Salt and Pepper

Slice cheese into 10 equal slices, pat dry and arrange on your serving platter. Use a whisk to mix olive oil, capers, red pepper, salt and pepper in a bowl. (I like to use a small mason jar and shake it util its emulsified) Spoon olive oil mixture over the cheese and serve immediately.
