Bacon Crackers with Blue Cheese Dip
My sweet and beautiful sister Jeannie shared this recipe with me over 20 years ago and I've been making it ever since. This is a perfect Thanksgiving Day appetizer or great for football parties. My Daughter brought these to a party at work and a co-worker said, "these aren't bacon crackers, these are better'n sex crackers".
Bacon Crackers
2 Packages Oscar Mayer smoked bacon (avoid thick sliced or center cut)
1 box of Keebler Club House crackers
Fresh ground black pepper
1/2 Cup grated Parmesan cheese
Preheat oven to 250 degrees. Line 3 cookie sheets with foil. Cut the entire package of bacon into 3 equal sections. Wrap cracker with bacon across the middle leaving the cracker edges exposed. Place on foil seem side down and complete until all crackers are gone. Sprinkle generously with grated cheese and fresh ground black pepper. Checking every 15 minutes, bake for 45 minutes to 1 hour until bacon is cooked and crackers are golden. Do not let the crackers brown. Serve warm or at room temperature with blue cheese dip.

Blue Cheese Dip
1 Cup low fat sour cream
1/2 of a Lemon
6 Chopped green onions
1/2 Teaspoon Tony Chachere's seasoning
1/2 Cup good crumbled blue cheese
1/2 Cup good crumbled blue cheese
3-4 Tablespoons of milk
Fresh cracked black pepper
Mix sour cream, juice from half a lemon, Tony Chachere's seasoning, blue cheese and green onion in a bowl. Add in cracked black pepper to taste. Add milk, one tablespoon at at time to loosen the dressing to your desired preference. Place in fridge for 30 minutes or longer before serving.
