Pepperazzi Stuffed with Goat Cheese

My friend Deb brought a variation of these to a picnic and I have made them many times since. These are a perfect small bite at a cocktail party or as a garnish to a mixed green salad.  I found these peppers at the olive bar in my local grocery store.


Pepperazzi  Stuffed with Goat Cheese

1 Pint of Pepperazzi peppers
6-8 Ounces of goat cheese
Lemon zest
Sea salt
Fresh ground pepper

Use a spoon to stuff peppers, sprinkle with lemon zest and top with sea salt and freshly ground pepper.
